Rice and Bean Burrito

Add to skillet

15 oz corn, drained

15 oz black beans, drained and rinsed

Cook until corn and beans are crisped stirring occasionally

Add taco seasoning

Cook until fragrant

Add

14 oz diced tomatoes

Cook until liquid is reduced

Mix in

1 cup brown rice, cooked

6 oz cheese

Add mixture to tortillas

Add mashed avocado, if desired

Fold and brown tortillas on heated skillet
