Shepherd’s Pie

Prepare mashed potatoes

Preheat oven 400℉

Heat in cast iron skillet

3 tbsp vegetable oil

Add

1 yellow onion, chopped

1 carrot, chopped

1 celery rib, chopped

Cook until soft but not brown, approximately 10 minutes

Add

1 lb ground lamb or beef

Cook until brown

Skim off excess fat

Add

1 tbsp flour

Cook stirring for 2 minutes

Add

¾ cup chicken or beef broth

½ tsp dried thyme

½ tsp dried rosemary

Pinch of nutmeg

Add salt and pepper to taste

Reduce heat

Cook 5 minutes until mixture thickens

Add mashed potatoes to top

Use fork to make peaks in the potatoes

Bake for 35 minutes
